### ===*" Julien Jammet's father was a butcher and pork butcher, and he made his first choux pastry for the family restaurant at the age of ten: "My mother had a real knack for pastry making, my mouth still waters," he recalls. It was in Bages, at the restaurant Le Portanel, that he learned the basics of local cuisine. Winner of numerous culinary competitions, he honed his skills with Gilles Goujon (Meilleur Ouvrier de France in 1996) at the Auberge du Vieux Puits (3 stars in the Michelin Guide) and then at the Table Saint Crescent alongside the two-starred chef Claude Giraud: "for me, the sauce was a revelation, a flash". As a pastry chef, he continued his quest with Laurent Boizumeau, a finalist in the MOF pastry competition. In September 2017, this instant cook opened the restaurant Le Plain Château in the lair of an old alchemist's house in La Roche-sur-Foron. Dedicated body and soul to his passion, the chef imagines a cuisine rich in flavour, offering the lion's share of sauce and casserole dishes: "A demi-glace full of flavour sends a meat to another planet.
