It was in 1999 that chef Katsumi Ishida opened the restaurant En Mets Fais Ce Qu'il Te Plait in Lyon. Having arrived in France seven years earlier, he cut his teeth with great chefs such as Joël Robuchon, Alain Chapel and Alain Ducasse.

Defining himself as an "explorer of flavours and harmonies", Katsumi Ishida works the product with finesse and inventiveness, while maintaining a great respect for the raw product. Savory sauces, perfectly controlled cooking and subtle flavors characterize his cuisine, which navigates between French and Japanese influences.
