Graduated from the Lycée hôtelier d'Illkirch in 2002, Cédric Rott began his career at the Château de la Messardière, a palace in Saint-Tropez, where he would spend five seasons until 2008. During this period, he alternated with the 5-star Annapurna hotel in Courchevel. He will then spend two seasons at the luxury hotel Guanahani in Saint-Barthélémy in the Caribbean during the winter, returning to Saint-Tropez in the summer.
Allison, who works in the dining room, studied the trade at the Chamalières hotel school in Auvergne, before doing seasons in the same tropical and Caribbean establishments.
The chef offers seasonal cuisine based on local products, in order to work with products of the moment, but "inspired" by the different places in which he has worked.
