Un peu d'histoire...
The second one refers to the word "scarsetta", or poverty, which forces people to be content with what they have, usually very little, and to look at other people's plates to enjoy their miserable leftovers. Others, however, give an explanation linked to the visualization of the piece of soft bread that when pushed with the finger to collect the sauce resembles a shoe with the leg sticking out.
Beware, however, Galateo does not forbid the "scarpetta", but requires that it be done only on informal occasions and using a fork, not your hands.
Make the slipper is a nice expression that finds its origin in the dialects of southern Italy. In reality there are two possible origins: one is a sort of metaphor and compares the shoe that you wear to the bread that passes through your plate. As the shoe crawls on the ground and collects what it finds, in the same way it is done with the morsel of bread that collects the sauce.
