Pierre Mercier did not know Chapel, he first hired in Mionnay in the 2000s.

He stayed in the Ain for seven years, until he became second in the kitchen. The establishment still sported two macarons, thanks to chef Philippe Jousse and Suzanne Chapel.

The latter took under her wing, at the same time, Yuko Matsumoto, a young Japanese cook, trained at the Plaza (at Ducasse's) and whom she began the career of the service in the dining room.
